Spaghetti Junction

Written by Will as a nice introductory dance for 6.
Double-stepped throughout except where noted. The beats listed below represent the count we use while teaching, where "1 and 2 and" would last the same duration as a double step.
Named Spaghetti Junction because we were considering using pasta names for a few of the figures, which then all got changed. Such is the folk process. Also, plenty of junctions are cloverleafs, like the chorus is (although I don't think any of the various Spaghetti Junctions around the world are, again, the folk process...). Broadly, we liked the name, and it stuck, which is definitely the Folk Process.

Chorus
1-4: Corners clash across forehand on 1, backhand on 2, then all forehand on 3, "and" & 4. Middles pass left shoulder and dance to their right around a corner to face up and down, ready to reenter the set.
5-8: Corners turn and similarly clash forehand up and down on 5, backhand on 6, and then forehand on 7, "and" & 8. Middles continue their cloverleaf, passing left and looping right.
9-16: Corners repeat their clashing patterns, middles complete two more cross-and-loops to get home.
Note: The corners should be careful to not leave trailing legs out behind them as they move, as the middles might be dancing a loop around them.
Figures
Toad in the Hole (or, Meatballs and Spaghetti)
1-4: Everyone takes two double steps to dance a small loop around their partner right shoulder to right shoulder, ending up back in place and facing up or down.
5-8: Everyone takes two double steps to chase half way around the outside of the set in one giant loop/sausage shape, following the person in front of you and changing lines at the ends.
9-16: Repeat 1-8 from your partner's position to get back home.
Petronellas (er .... Linguine? not all the figures have good pasta equivalents)
Not really stepped. Move with a right-left-right during the petronella (i.e. no hop so not a full double step) and then stand still while clashing.
1-2: Everyone petronellas forwards and to their right, turning 3/4, into a long line of 6, facing your partner
3-4: Everyone clashes 3 forehand strikes on 3, "and" & 4.
5-6: Everyone petronellas as above into their partner's starting space
7-8: Everyone clashes 3 forehand strikes on 7, "and" & 8.
9-16: Repeat 1-8 from your partner's position to get back home.
Stars (aka Devil's Elbow ... so Macaroni?)
1-4: Corners hold their sticks out in front of them.The middles stick their sticks out to their right, forming a 3 person star with the two corners to their right. Each star takes two double steps to go roughly once around, until the middles are left shoulder to left shoulder in the centre of the set.
5-8: Each middle unravels their star, dancing to their left around the other star with their two corners chasing them, and curling tight to start forming another star at the other end of the set. Everyone switches sticks to their left hand during this time.
9-12: Everyone dances a left hand star once around in two double steps.
13-16: As the middles pass each other, the lead their two corners around to the right around the other star, switching sticks back to their right hand.
Picture Frames (or Ravioli, this works works fairly well, since it's a twiddly edged square with some nice stuff inside)
1-4: Corners dance broadly as in Picture Frame for DIY, taking one double step to pass across by the right shoulder, then one double step to turn out in a small loop 3/4 to face up and down. Meanwhile, the Middles do two stamping steps around each other to their left, on 1 & 2 then stand still and stick forehand on 3, "and" & 4. Keep this menacing and fairly small as the corners dance around you.
5-16: Repeat 3 more times back to place.
Triangles (what are the bow-tie ones called? Farfalle?)
The first move is a bit of a fudge, but the pattern makes sense once you're in to it. As with Petronellas, not really stepped. Move with a right-left-right during the petronella (i.e. no hop so not a full double step) and then stand still while clashing.
1-2: Imagine the middles are stood back to back in the middle of the set, facing up and down, each facing the corners that are usually to their right. They're not, but imagine it anyway. Each middle and the two ends facing them petronella to their right, one place around this triangle. In reality, the middle just petronellas to their right along the side of the set to a corner position, the right hand end of the line swaps to the other line in front of them, and the left hand end of the line petronellas to the supposed point of the triangle in the middle of the set we're pretending the middle came from. Trust me, it does work.
3: Starting with the original middle, they stick forehand with the person to their left around this triangle. It doesn't matter where the three of you are in the set now, the person who started as the middle (and has been doing cloverleafs in the chorus) always starts the sticking pattern.
"and": The original corner who just sticked with by the original middle turns to their left and sticks forehand with the other original corner.
4: This other original corner turns to their left and sticks forehand with the original middle.
5-6: Everyone petronellas one place to their right around the triangle. This is much easier now you're all in the right places.
7-8: Starting with the middle clashing to their left, 3 clashes around the triangle on 7, "and" & 8, the same as on 3, "and" & 4.
9-12: Same again, everyone petronellas one place to their right around the triangle, then clashes starting with the original middle around the triangle to their left with the usual rhythm.
13-14: Everyone petronellas one place to their right around the triangle.
15-16: Everyone strikes the ground 3 times with the usual timing, then walks off with confidence.
